Happy Birthday, Baby!! June 23, 2008

Daniel’s birthday is today. We celebrated with Pimms cups, Thai food, and his parents. Helllooooo, family!

I asked Mr. D what he wanted me to make for his birthday meal, and he said “That chicken basil coconut dish you make.” To which I replied, “But I already made that for your parents!! I want to make something different!” He then very aptly pointed out that it was, in fact, HIS birthday we were celebrating. Okay, Basil Coconut chicken it is then. 

I do have to admit, it IS terribly delicious. Colorful too.

I got the recipe from Video Jug, a website where, and I quote, “life is explained, on film”…. with a delightful British accent for added flavor. To make this fabulous and mouthwatering dish, click HERE. I pair it with a Thai Tomato and Green Bean salad, which compliments the flavors in the Coconut Chicken quite nicely indeed. Again, a recipe compliments of Video Jug. (Have I mentioned how fabulous it is???) And of course every birthday meal MUST be followed by a birthday dessert. 🙂

This is a fruit tart that I have modified from one of my mother’s family recipes for Torte’. It’s very simple and super delicious. I usually cover the entire tart with fresh peaches, but as I didn’t have enough ripe ones to complete it, I decided to substitute some fresh strawberries for variation. I even went so far as to put the strawberries that were heart shaped on the top, as a sign of my love for the birthday boy!! Yeah, apparently he missed the memo. 😉 Typical guy. That’s what he gets for dating a silly girl. 

A silly girl who CANNOT seem to whip heavy cream properly!! Argh! I don’t think I have the patience for it, for it never seems to whip quickly enough for me, not to mention I get it EVERYWHERE. Please notice the towel that I am holding up for splatter protection.

……to no avail however.

Please note lovely and delightful whip cream splatters on my once black top. Yeah. I suppose it turned out in the end. Although a tad on the flat side. Sadness.

After dinner and presents and desserts, Daniel decides that his mum should try playing his video game, First Person Shooter.

Much to his amusement, of course.

And hers as well, apparently.

It really was quite a funny show. Here, let me share.

So Daniel sat down and gave her a lesson on how to really do it. And she tried again, and did……. well about the same. 

It’s okay, Cindy. I thought you were brilliant. 

Unfortunately, soon it was time to say goodbye to Cindy and Dennis. Daniel and Charlie did their best to look sad.

Daniel’s been sick all this week, so it wasn’t too hard for him. Poor bloke.

Ahhhh, my sweet boys all snuggely wuggely. Melts a gals heart every time.

Then there was the after-party party, complete with Mac computer and snoring dog.

Apparently Charlie sleeps with his mouth open, like his momma. Britt, please try and control your laughter. What I really need right now is that picture of me on the boat in all my sleeping-with-my-mouth-wide-open glory. Yeah, you know the one I’m talking about! 😉 I still have yet to see him drool like me though. 


All in all it was a brilliant evening! So glad I could share it with the lot of you.


P.S. Rhonda, if you are reading this, I’m THRILLED you tried the empanadas! I hear they were a smashing success. Or shall I say a KISSING success. Yeah, baby!

    I love, love, love your web blog. You are so cute and sweet. Wish we would have come celebrate Dan’s birthday, but what with a newborn and all, it just wasn’t happening. Soon, though, we need to get over there. I still haven’t seen your place, met your animals (except Lucy) or been lucky to taste the food I’ve been told you prepare so tastily! Loves! -Jennifer-
